What is Goetta?
Goetta (pronounced get-uh) is a sausage specialty originating from German immigrants in Southwest Ohio and is incredibly popular in Cincinnati and Northern Kentucky; they have a “goetta-fest” every summer. Traditionally made by combining pork and/or beef with steel-cut oats, it was created as a savory, hearty, affordable way to feed families.
When sliced and pan-seared, goetta becomes crispy on the outside and tender on the inside — comforting, satisfying, and packed with flavor.

How BOR Meats Makes Goetta

Our recipe uses ground pork and beef stock combined with steel-cut oats, fresh onions, fresh garlic and mild German spices.
We follow classic goetta traditions with a handcrafted approach:
- Clean, simple ingredients

How to Cook Goetta

Option 1: Pan-Sear (Most Popular)
- Cut ½” slices
- Place in a lightly oiled pan
- Cook over Medium to Medium-High Heat
- Crisp both sides
Option 2: Griddle
Great for breakfast sandwiches, markets, or feeding a crowd.
Option 3: Oven
Lay slices on a lightly greased sheet and bake at 400°F until crisp.
Pro Tips
- Ensure goetta is fully thawed (thaw overnight in refrigerator) and use a serrated knife to slice
- Use beef tallow or bacon grease instead of oil
- Cast-iron pans are better than stainless steel, which are better than Teflon coated
- Goetta is ready to flip when a spatula slides under without the tendency to for it to “push into a pile”
